Hard Cheese 

Hard cheeses usually have moisture contents lower than 35%. Examples of hard cheeses are Parmesan, Emmenthal and Gruyère, all made from cow's milk.

Hard cheeses are manufactured in a similar way to semi-hard cheeses, except that a larger amount of whey is drained from the curd before the cheese block is formed.

The cheese block is subjected to higher levels of pressing and longer ripening times.
