Pasta filata cheeses were originally Provolone, Mozzarella, and Caciocavallo, from southern Italy. Today, cheese is produced in several other countries. The related Kashkaval cheese is produced in several Eastern European countries.
These cheeses are manufactured by cooking and stretching cheddared curd.
